racines qui descendent en profondeur dans les sols. En hiver, on plante des c\u00e9r\u00e9ales pour casser le sol et on le nourrit d'humus pour introduire de l'azote dans le sol. Au printemps, on plante des gramin\u00e9es qui stimulent les racines des vignes et les obligent \u00e0 trouver leur nourriture en profondeur.<\/p>\n\n\n\n<p>En conclusion, la plantation de cultures couvertes:<\/p>\n\n\n\n<ul>\n<li><strong>\u2022 fournit de l'azote,<\/strong>&nbsp;au sol,<\/li>\n\n\n\n<li><strong>\u2022 l'enrichit en substances organiques<\/strong>,<\/li>\n\n\n\n<li text-heading text-huge\">Travailler notre sol<\/h1>\n\n\n\n<p>Des analyses microbiologiques r\u00e9alis\u00e9es par un laboratoire sp\u00e9cialis\u00e9 ont montr\u00e9, apr\u00e8s une \u00e9tude d\u00e9taill\u00e9e du sol des diff\u00e9rentes parcelles, quelles c\u00e9r\u00e9ales et gramin\u00e9es s\u00e9lectionn\u00e9es devaient \u00eatre plant\u00e9es durant l'hiver.<\/p>\n\n\n\n<p>Des \u00e9chantillons de sol sont pr\u00e9lev\u00e9s jusqu'\u00e0 2 m\u00e8tres de profondeur.<\/p>\n\n\n\n<p>Il existe deux mani\u00e8res de travailler le sol:<\/p>\n\n\n\n<ul>\n<li>\u2022 Entre les rangs, le sol est travaill\u00e9 avec une charrue qui griffe le sol.<\/li>\n\n\n\n<li>\u2022 Entre les souches de vigne, le sol est travaill\u00e9 \u00e0 l'aide d\u2019un intercep muni d'un capteur qui oriente le bras hydraulique pour \u00e9viter le contact avec les souches.<\/li>\n<\/ul>\n\n\n\n<p>Cette a\u00e9ration du sol permet aux racines de pousser en profondeur, plut\u00f4t que de text-heading text-huge\">Travailler notre sol<\/h1>\n\n\n\n<p>Au Domaine des Rabelles, le vignoble est conduit de mani\u00e8re \u00e0 assurer naturellement l\u2019\u00e9quilibre des sols et \u00e0 supprimer l\u2019utilisation de produits chimiques de synth\u00e8se.<\/p>\n\n\n\n<p>Les seuls produits que nous utilisons sont naturels et limit\u00e9s \u00e0:<\/p>\n\n\n\n<ul>\n<li>\u2022 La bouillie bordelaise, une solution de sulfite de cuivre, et d'eau \u00e0 laquelle on ajoute de la r\u00e9sine de pin : elle prot\u00e8ge la vigne contre le mildiou (champignon)<\/li>\n\n\n\n<li>\u2022 le soufre, qui prot\u00e8ge la vigne contre l'o\u00efdium (champignon) et les acariens.<\/li>\n<\/ul>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/section>\n\n\n\n<section class=\"wp-block-group pd-v-lg slider-wrap vigne<\/h1>\n\n\n\n<p>Le palissage favorise l\u2019augmentation de la masse foliaire (la quantit\u00e9 de feuillage) et son exposition au soleil. Les feuilles de vigne jouent un r\u00f4le d\u00e9terminant dans le processus de photosynth\u00e8se, utilisant l'\u00e9nergie du soleil, des mol\u00e9cules d'eau et de dioxyde de carbone pour produire du sucre et de l'oxyg\u00e8ne.<\/p>\n\n\n\n<p>Plus la masse foliaire est \u00e9paisse, plus la teneur en sucre augmente, am\u00e9liorant la maturation des raisins. La maturit\u00e9 du raisin d\u00e9pend de la qualit\u00e9 de la photosynth\u00e8se et de la surface foliaire. Une bonne taille est fondamentale pour la productivit\u00e9 de chaque cep et pour la qualit\u00e9 du raisin. La renaissance du vignoble passe par la refonte et la replantation des vignes pour les adapter \u00e0 la strat\u00e9gie qualitative nouvellement mise en place.<\/p>\n\n\n\n<p class=\"translation-block\">La taille poursuit <strong>deux objectifs<\/strong>:<\/p>\n\n\n\n<p><strong>\u2022 L'a\u00e9ration des plantes<\/strong>:<br>Les vignes sont taill\u00e9es de mani\u00e8re \u00e0 laisser une forme en V au centre du tronc. La taille en V permet l'a\u00e9ration de la plante et \u00e9vite ainsi la concentration de champignons ou de bact\u00e9ries.<\/p>\n\n\n\n<p><strong>\u2022 La limitation de production<\/strong>: On limite le rendement en taillant court, c'est-\u00e0-dire en laissant 4 porteurs par pied. Les sarments sont rabattus \u00e0 1 ou 2 bourgeons pour obtenir 4 \u00e0 6 grappes maximum par pied. C'est le moment o\u00f9 le raisin se referme sur sa rafle et commence sa croissance. Cette technique consiste \u00e0 s\u00e9lectionner les meilleures grappes de chaque pied. Au Domaine des Rabelles, nous ne gardons normalement que 4 \u00e0 6 grappes par pied.<\/p>\n\n\n\n<p>Cela signifie que toute l'\u00e9nergie de la vigne se concentre sur un plus petit nombre de grappes. Cela donne des raisins de haute qualit\u00e9 et concentre la maturation des raisins. L'\u00e9claircissage \u2013 ou vendanges vertes \u2013 commence en juin et se termine fin juillet. Cette couche de peaux et d'autres solides est connue sous le nom de chapeau. Comme les peaux nourrissent le vin, le chapeau doit \u00eatre poin\u00e7onn\u00e9, ce qui se fait traditionnellement \u00e0 l\u2019aide d\u2019une fourche en L.<\/p>\n\n\n\n<p><strong>Remontage<\/strong>&nbsp;: on pompe le jus \u00e0 travers le bouchon<\/p>\n\n\n\n<p><strong>Cycle de soutirage et retour<\/strong>&nbsp;(d\u00e9lestage) : le jus est transf\u00e9r\u00e9 dans un nouveau r\u00e9cipient. Il nourrit le vin, le rend plus ample et arrondit les tanins. Le domaine est ainsi responsable de tout le processus, de l'\u00e9levage des raisins \u00e0 la mise en bouteille.
